Easy Quiche Lorraine Recipe in 4 Simple Steps

Technique
STEP 1
Roll out the pastry and place it in the tin. Let it melt at room temperature to prevent cracking. Flour rolling pin and surface. Press gently on the pastry from the edge closest to you, outward, several times, turn 90deg and repeat until 1cm thick. Roll out the pastry, in one direction only, and turn every couple of rolls to make a circle with the thickness of PS1 coins. Roll pastry over the tin with floured side facing up, using a rolling pin.

STEP 2
Trim the pastry and line the tin: Remove any air pockets by cleaning the pastry on the bottom of the pan. Then, gently press the pastry against the edge of the tin. Trim pastry overhangs with kitchen scissors, so that pastry is 1cm higher than the rim. Use the extra pastry to press into the fluted edge. Covered with cling film, chill for 30 minutes. Leftovers can be frozen or chilled to reuse.

STEP 3
The oven should be heated to 200C/fan180C/fuel 6 before baking the blind pastry case. Scrunch a large piece of parchment into a ball. It can be used to line a chilled pastry case. Then, add baking beans, with more positioned against the edges to support the pastry wall during baking. Bake for 15-20 minutes on a baking tray until the edges are crispy and set. Remove from the oven and carefully remove paper and beans. Return the pastry to the oven and cook for another 5 minutes, or until both sides and bottom are golden.

STEP 4
Reduce oven temperature to 150C/fan130C/fuel 2 and fill the pastry case. Fry the bacon in a hot pan until golden. Spread the bacon over the base of the pastry, discarding any extra fats. Then sprinkle the cheese on top. Mix together the eggs, cream, and nutmeg, then fill half of the case. Place the baking sheet on a shelf in the oven, and then pour the remaining mixture. Bake for 30 to 35 minutes, or until the mixture is just set. Remove from oven and allow to cool for 10 minutes.
