60g, sliced and stoned
Half a quarter, then sliced
Half the weight of 50g
Dressing
Finely grated zest 1 giant lime
- finely chopped and deseeded
Trimmed and finely chopped
1 tsp, chopped
1 tsp. of sprapeseed oils
Half a teaspoon of syrup
Methodology
STEP 1
In a small saucepan, boil the quinoa for 15 minutes until the grains appear to have burst. Drain well and pour into a large bowl. Meanwhile, prepare the dressing. Combine the lime juice and zest with the chilli.
STEP 2
Mix half of the dressing with the spring onions, half of the tamari, and half of the coriander. Add all the salad greens and spoon onto two plates.
STEP 3
Pour the remaining dressing over the prawns and stir in the oil and maple sugar. Spread the dressing over the quinoa and sprinkle the coriander on top to serve.
