Spicy Piri-Piri Chicken with Smashed Sweet Potatoes & Broccoli

This one-pan traybake includes piri-piri chicken, broccoli and candy potatoes. It is easy to prepare and contains three of the five-a-day.

Peel and reduce 3 large (about 900g) into chunks
Oil for drizzling
Pores and skin are left on 6-8 thighs

Spice mix 25g (or the gentle version, if you prefer)
Long-stem 300g broccoli
Methodology
STEP 1
Heat the oven to 160C fan/180C/fuel 4. Pour the oil, seasoning and sweet potatoes into a large roasting pan. The potatoes should be pushed to one end of the roasting tin. Toss the chicken with the onions, spices, oil, and some seasoning on the other. Stirring everything halfway through the roasting process, roast for forty minutes. Add the broccoli in the tin and drizzle some oil over it. Season, then continue to roast for another 10-15 minutes.

STEP 2
Remove the rooster from the tin. Use a fork to mash potatoes, making sure you include all the juices from the rooster and the spices in the pan. Fold the mash into the tin and top with broccoli, rooster, and onions. Serve from the tin on the middle of the table.
